What's Roll Sushi?


Roll sushi is a type of sushi where ingredients and rice are placed on seaweed laid out on a bamboo mat, then rolled together.

The culture of roll sushi dates back to the Edo period (approximately 270 years ago).

In the past, due to limited sanitation facilities compared to today, people couldn't eat raw fish. That's why sushi was eaten as a preserved food, naturally fermented by the lactic acid bacteria present in rice. As time progressed and with developments in vinegar-curing fish and refrigeration facilities, sushi began to be eaten with raw fish.

It was during the Edo period (270 years ago) that rolled sushi emerged, when sushi evolved from a preserved food to something that could be eaten shortly after being prepared with vinegar.

The term "maki sushi" first appeared in a 1750 cookbook called "Ryori Sankai-kyo." Initially in Tokyo, rolled sushi was commonly made with egg and seaweed, and the culture of rolling with seaweed is said to have originated in Edo (present-day Tokyo). In Osaka, thick rolls were mainstream, featuring various ingredients such as egg, conger eel, and shiitake mushrooms.

Modern-day rolled sushi has evolved globally with various creative interpretations, such as the California Roll which reverses the position of rice and nori, and the Rainbow Roll using avocado, showing how Japanese sushi culture has expanded internationally and continues to evolve with new ideas.

1 Bamboo mat

2 Vinegar rice



3 Seaweed


To make it, place the seaweed on the bamboo mat and spread the vinegar rice on top. Then add your desired ingredients and roll firmly. Wait 5-10 minutes while keeping it rolled to let it set its shape.

Cut it into bite-sized pieces and it's ready to serve.

In Japan, there is a tradition called Setsubun where in February, people eat an entire uncut sushi roll in one go.
