We hosted a fish cutting demonstration and sushi catering event for 40guest and 80 guests at "DAIDOKORO," a venue with kitchen facilities located about 15 minutes from Kyoto Station.

We are pleased to present a special event where we delivered a tuna cutting demonstration and sushi catering to 40 guests. The cutting demonstration of a 15kg tuna showcased masterful skill, truly a feast of craftsmanship. For about 40 minutes, the venue was filled with breathtaking tension and cheers.
After the demonstration, guests were captivated by an assortment of fresh sashimi and sushi prepared right before their eyes by Sushi Lab.'s artisans. The freshly cut premium tuna was surprisingly tender, and its melt-in-your-mouth texture drew spontaneous exclamations of "Delicious!"
The carefully selected sake pairings were also highly acclaimed, with gourmand guests savoring the different sake flavors matched to each cut of tuna. In the warm atmosphere, conversation flowed freely between guests, creating a wonderful time of culinary excellence and social interaction.
Particularly memorable was an emotional moment during the cutting demonstration. When Mr. Nishiyama began cutting the otoro (fatty tuna), the entire venue fell silent, everyone mesmerized by his delicate knife work. When the sliced otoro gleamed brilliantly in the light, spontaneous applause erupted.
During the dining period, guests enjoyed conversations with the sushi chefs while learning about the technique and thought put into each piece of sushi. Some guests were even moved to tears, saying "This is the best sushi I've ever had in my life," making it a special evening where hearts connected through cuisine.

The fish cutting show was performed by Mr. Nishiyama from Kimura Fresh Fish Store in Kyoto's Nishiki Market. When the demonstration began, the venue was filled with anticipation and excitement. All 80 guests were captivated by the masterful skills of Mr. Nishiyama from the renowned Kimura Fresh Fish Store in Nishiki Market. In the wonderful space of "DAIDOKORO" venue with its kitchen facilities, participants eagerly took photos and cheered at Mr. Nishiyama's skillful knife handling.
As the fresh fish was transformed into exquisite pieces, the venue erupted with gasps of amazement and applause, bringing the demonstration to a triumphant conclusion. The subsequent catering service allowed everyone to savor sushi made from the freshly prepared fish, making it a memorable event where all participants could experience something truly special.
The sushi catering featured lean tuna as the main attraction, and guests had the opportunity to enjoy the rare fatty tuna portions and sashimi, utilizing every part of the fish without waste.
Participants exclaimed "Delicious!" and "It melts in your mouth!" with each bite of fresh sushi, and many were seen taking photos with their smartphones. It was particularly memorable to see people closing their eyes in pleasure while eating the fatty tuna nigiri and sharing their excitement with those seated next to them.
Furthermore, seeing the fish parts from the demonstration transformed into sushi right before their eyes increased everyone's interest in the food, with many participants eagerly asking Mr. Nishiyama questions. The freshly cut fish was exceptionally fresh and offered an extraordinary dining experience.
